This year, celebrate Halloween with family, around an easy-peasy delicious pumpkin lavender n’ spice bûche… Tender and comforting, both tall and small are sure to grin with pleasure!
Cake
- 3/4 cup (96g) white flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1 tbsp Azulée Organic Cullinary Lavender (ground)
- 1/2 tsp salt
- 1/4 tsp ground clove
- 3 large eggs
- 1/2 cup (107g) brown sugar
- 1/2 cup (100g) white sugar
- 2/3 cup (151g) pumpkin puree
Cream Cheese Icing
- 5 oz (142g) cream cheese, room temp.
- 5 tbsp (71g) unsalted butter, room temp.
- 7 1/2 tbsp (59g) icing sugar, plus some extra for dusting
- 3/4 tsp warm water
- 1/2 tsp ground ginger
- 1/4 tsp salt
Directions
- Preheat the oven (middle rack) to 350°F. Line a 43 x 30 cm (17 x 12″) jelly-roll pan with parchment paper, leaving 2-inch overlap on long sides. Oil the parchment paper.
- Sift flour, baking powder, baking soda, cinnamon, ginger, organic ground Azulée lavender, salt and cloves into a bowl. Reserve.
- In a larger bowl, whisk the eggs and two sugars. On medium speed, add the pumpkin puree until it thickens (about 3 minutes). Reduce speed to low and incorporate the dry ingredients.
- Transfer to centre of the prepared jelly-roll pan. Spread the batter evenly, leaving about a 2-inch rim all round. Smoothe surface with spatula.
- Bake for 15-20 minutes, at most.
- Slide parchment paper with cake onto a cooling rack or countertop. Let cool for 5 minutes. Cover with a clean tea towel.
- Roll the cake, parchment paper and dish cloth starting at narrow end.
- Prepare the icing by mixing all ingredients together and beating (power beater) until fluffy.
- Unroll the cake. Spread icing evenly leaving a 1/2-inch border. Gently but firmly re-roll the bûche, unpeeling it from the parchment paper as you go. Refrigerate the cake in a clean tea towel fold-side down for about 1 hour.
- Dust generously with icing sugar and serve in thick slices. Bon appétit!
